One of my favorite go-to dinner recipes for my family are these HEB Tex Mex Enchiladas. They are spicy and yummy and super easy to make! So I wanted to share the recipe with you all ... enjoy!
PS - these are a little easier to make when your sous chef is as cute as mine ;-)
Ingredients:
- 1.5lbs of lean ground beef or turkey
- 15-20 small corn tortillas
- 2 cups of half and half
- 2 cups of shredded cheddar cheese
- 2 jars of HEB brand Rockin' Moroccan sauce
Directions:
- Pre-heat the oven to 400 degrees and grease a 9 x 13 baking dish
- Brown your meat and set aside in a large bowl
- Empty 1 jar of Rockin' Moroccan sauce into a sauce pan over medium heat. Add 1 cup of whipping cream and 1/2 cup of shredded cheese. Mix together until smooth and bring to a boil. Let boil for 3-4 minutes.
- Pour sauce mixture over ground meat.
- Repeat step above to create an extra batch of sauce to use as a topping. Once you have let the sauce boil for 3-4 minutes, pour into separate bowl and set aside.
- Begin browning your corn tortillas. NOTE: I find that this step is A MUST. Corn tortillas add the right texture to enchiladas (versus flour) but they can be difficult to roll without breaking. If you brown for a minute on each side, they roll up juuuuuuuuuust fine.
- Begin adding a spoonful of the ground meat mixture to the inside of the tortilla and roll nice and tight and place in baking dish.
- Repeat until you have filled up your dish.
- Pour remaining ground meat mixture on top.
- Now, grab the extra sauce mixture that you had set aside and pour it on top, covering all of the surface area.
- Sprinkle with remaining cheese and bake for 15 minutes at 400 degrees.
